That depends on which flour we're talking about!
Both the lentils and the chickpeas used in our alternative baking flours are a raw product—the fresh legumes are simply dehydrated and milled. The cauliflower, on the other hand, is steamed before it's dehydrated and milled and is not a raw product. This is because the high water content of cauliflower makes it challenging to bake with unless the fibers are heated to 'sweat' out their excess water (if you've ever made a soggy cauliflower crust from grated, fresh cauliflower, you know just what we're talking about!).
